Please report your grams protein/lb of lean body weight and changes in strength, muscle, and body fat percentage. I think the sup fitness does help a little with windsurfing, but its hard to tell because I haven't had any really physically challenging windsurfing sessions in ages. I also think windsurfing is good strength and balance cross-training for sup racing, as long as you have enough wind to plane. Yes, I have sometimes missed or passed on windsurfing opportunities because of SUP. For example yesterday I missed an opportunity to sail 15 knot winds with my buddy at the Sanibel Causeway because I was up in Sarasota doing a practice sup race. I sure was jealous of the slalom sailors ripping across Sarasota bay while I was head down struggling to paddle upwind through ugly little chop reflected off the seawall. I would have rigged but I'd carpooled up with a sup friend and didn't have my gear. Of course, the majority of windsurfing sessions that I'm passing on now are the dicey ones where you'd have to rig your biggest gear and maybe still not plane, because those are the conditions we usually get in SW FL. We've got planing-strength offshore wind today so I'll go to the beach and try to get some kind of session in that.
